1 bunch radishes, trimmed & quartered
1 t coconut oil
salt & pepper to taste
juice of 1 lemon
Preheat oven to 500°. In an ovenproof skillet, heat coconut oil until shimmering. Add radishes, season with salt and pepper and cook over high heat stirring occasionally until lightly browned in spots, about 2 minutes. Transfer the skillet to the oven and roast for 15 minutes. Return skillet to the burner and add lemon juice.
